2nd Language is more than just a restaurant—it’s a story of transformation, multicultural inspiration, and a deep passion for authentic cuisine.

Origins: From Historic Building to Culinary Hub

The restaurant is housed in a building with a rich Evansville history. Originally crafted in 1894 for the Marsh-Scantlin Bakery and later renamed the National Biscuit Company in 1900, the structure had long stood as a symbol of potential. Local restaurateur Randy Hobson initially doubted the feasibility of converting the old bakery into a modern space, but after stepping inside, he saw its unique charm and possibilities. The building’s renovation preserved its historic character while introducing an open, collaborative design that now hosts both our pizzeria and savory Asian dining inside 2nd Language.

Food as a Universal Language

The name “2nd Language” reflects Hobson’s belief that food transcends words and connects people across cultures. After a 25-year career traveling the world, Hobson developed a love for experiencing different cuisines and wanted to share that with Evansville. Our first restaurant, Pangea Kitchen, introduced the city to Neapolitan pizza and Thai dishes, quickly becoming a local favorite. Building on this multicultural foundation, we launched 2nd Language to bring authentic Asian ramen and globally inspired comfort foods to downtown Evansville.

Hobson’s travels and appreciation for Japanese culture, in particular, inspired the restaurant’s focus on ramen and Asian flavors. He emphasizes that the menu is not about expensive or exclusive dishes, but about “dishes of the people”—comfort foods that are authentic, approachable, and deeply rooted in their countries of origin.
